11 OZCorti Brothers has made Seville Orange marmalade since 1981. It is made using the recipe in Mrs. Beaton’s Book of Household Management from oranges grown in Sacramento. Its name is a play on this idea: Sacramento is California’s capital and “capital” is a British term for “very fine”. It is left to mature in jar, so that it develops a rounder, softer, more mellow flavor from the usually bitter Seville oranges. The production year of the current stock is 2015.
