Our Nicaragua Pacamara Rare Selection ~ Rare Bean coffee is from Jinotega, Nicaragua, at 4000 feet elevation, the farms of Don Tomas Coffee are passionately producing truly exceptional coffee. Pacamara hybrid coffee was created to get the best characteristics of the two parent varietals, Pacas and Maragogipe . The new coffee was named PACAMARA in reference to the ﬁrst four letters of each parent . Pacas is a natural mutation of the Bourbon varietal and Maragogipe is a mutation of the Typica varietal. It took the Salvadoran Institute for Coffee Research (ISIC) approximately 30 years of careful scientiﬁc research to create it back in 1958 This unusually large bean shows complex and intense aromas; medium to dense body with a creamy texture; and elegant acidity. It has wonderful notes of chocolate and butterscotch.
